Buying pork directly from an Alberta producer can shorten the distance between the person raising the animal and the person eating the meat. It also means understanding how that particular farm handles pricing, processing and pickup.
Start with what you are actually buying
Some farms sell individual frozen cuts or curated pork boxes. Others take orders for a half or whole hog that will be processed later. These are different purchasing arrangements, so ask exactly what the quoted price includes.
Ask about the farm
If production practices matter to you, ask where the pigs are raised, whether they have outdoor access, what they eat, how illness is treated and how the farm approaches animal handling.
Specific answers are more useful than assuming terms such as local, pasture-raised or naturally raised describe every aspect of production.
Understand the processing arrangement
Ask which processor will be used, whether slaughter and cutting charges are included, how cut instructions are collected, whether curing or smoking costs extra, and when the finished pork is expected to be ready.
Plan for pickup
A half or whole hog can produce a substantial quantity of packaged meat. Make sure you have adequate freezer capacity and know where and when the order must be collected.
Farm-direct purchasing works best when the producer and customer understand the arrangement before the animal goes to the processor.
