Managing Processing Bookings and Capacity
Processing capacity is one of the most important links in the farm-direct beef supply chain. A clear booking system helps processors use their capacity efficiently while giving producers realistic dates they can communicate to customers.
Make the booking process clear
Producers should know what information is required to reserve a slaughter date, how far ahead bookings are accepted and what happens if livestock are not ready.
Useful booking information can include:
- Producer name and contact information
- Number and type of livestock
- Requested slaughter date
- Expected processing services
- Whether multiple customers are involved
- Who will submit cut sheets
- Who will pay processing charges
Don’t overbook the cutting room
Slaughter capacity is only one part of processing capacity. Cooler space, aging time, cutting-room labour, packaging, freezer space and customer pickup all affect how many animals a facility can process efficiently.
Capacity planning should follow the carcass through chilling, aging, fabrication, packaging, freezing and pickup.
Plan for seasonal demand
Farm-direct cattle may arrive in seasonal waves. Producers finishing cattle on pasture or booking fall beef orders can create periods of particularly high demand.
Encourage regular customers to reserve dates early rather than assuming the same week will always be available.
Have a cancellation policy
Missed processing dates can leave valuable capacity unused. Explain how much notice is required to change a booking and whether deposits or cancellation charges apply.
Communicate delays early
Equipment problems, staffing shortages and other unexpected events can affect processing schedules. Early communication gives producers time to manage customer expectations and livestock logistics.
