Working With Farm-Direct Beef Producers
Farm-direct beef creates a different relationship between processor and producer than conventional livestock marketing. The producer is often coordinating the animal, processor, cutting instructions, payment and final customer at the same time.
Understand the producer’s role
A farm-direct producer may be responsible for finding customers, collecting deposits, explaining estimated weights, coordinating cut sheets and arranging pickup.
Processors can make that job considerably easier by clearly communicating their own requirements.
Publish your services
Producers should be able to determine:
- Species you process
- Whether you accept farm-direct beef
- Available slaughter dates
- Aging options
- Cutting options
- Packaging options
- Specialty processing available
- Who submits cut sheets
- How processing charges are calculated
- Pickup procedures
Don’t make producers guess
A producer cannot accurately explain processing to customers if the processor’s policies are unclear.
Even when the customer purchased the animal from the farmer, the quality of communication at the processing stage affects the customer’s overall experience.
Set realistic timelines
Explain slaughter scheduling, aging, cutting and pickup timelines. If seasonal demand changes those timelines, tell producers early.
Build long-term relationships
Reliable producers can become valuable repeat customers. Likewise, a reliable processor can become an important part of a farm-direct beef business.
Clear expectations on both sides reduce errors and make the local beef system stronger.
