Pork Processing and Inspection in Alberta

Raising the pig is only one part of producing pork for consumers. Slaughter, inspection, cutting, packaging and sometimes curing or smoking all occur before the meat reaches the customer’s freezer.

Inspection matters when meat is sold

Alberta operates a provincial meat inspection system for provincially licensed meat facilities. Federal establishments operate under federal requirements. Which system applies depends on the operation and where the meat is intended to be marketed.

Alberta also has specific licensing frameworks for activities such as on-farm slaughter and mobile butchering. These routes have their own conditions and should not be confused with ordinary inspected retail meat sales.

Ask the producer: Where will my pig be slaughtered and processed, and is the meat being prepared through the appropriate inspected system for this sale?

Processing is more than slaughter

After slaughter, the carcass may be chilled and fabricated into retail cuts. Depending on the order, the processor may also grind meat, make sausage, cure bacon or ham, smoke products and package the finished pork.

Processing charges vary

A producer’s advertised animal price may or may not include slaughter, cutting, wrapping, curing, smoking or sausage-making. Consumers should ask for the complete pricing structure before ordering.

Provincial and federal systems

Provincial inspection supports eligible meat production within Alberta, while federally regulated establishments operate within Canada’s federal meat framework and can have broader interprovincial or export market access.

For a farm-direct customer, the practical question is usually straightforward: who is processing the animal and what exactly is included in the purchase?
