Poultry Processing and Inspection in Alberta

Poultry must move from the farm through slaughter, chilling and packaging before it reaches a consumer. Understanding that process is an important part of buying chicken or turkey directly from a producer.

Alberta has different slaughter frameworks

Alberta’s meat inspection system includes provincially licensed facilities as well as specific licensing pathways for certain slaughter activities. Federal establishments operate under Canada’s federal food inspection framework.

The rules applying to a particular transaction depend on how the meat is produced and distributed.

Ask where your poultry is processed

A farm-direct customer can ask which facility processes the birds and what inspection or licensing framework applies to the meat being offered for sale.

Transparency question: Where are your chickens or turkeys slaughtered and processed, and what inspection framework applies to the meat I am buying?

Chilling is important

After slaughter, poultry must be handled and chilled appropriately. Processing may also include cutting, packaging and freezing before customer pickup.

Processing affects the products available

A processor set up primarily for whole birds may offer different options from one providing extensive cutting and packaging services. This can influence whether a farm sells whole chickens, individual cuts or both.

Know what your price includes

Ask whether slaughter, processing, packaging and freezing are included in the farm’s advertised price. Clear pricing helps customers compare farm-direct options fairly.
