Customer Pickup and Cold Storage

The processing job is not finished when the final package is wrapped. Finished beef still needs appropriate storage and an organized handoff to the producer or customer.

Tell customers when the order is ready

Use a consistent notification process and clearly identify who is responsible for pickup.

Where several customers share an animal, make sure each portion is clearly associated with the correct customer.

Explain the pickup window

Freezer space is valuable. Tell customers how quickly completed orders need to be collected and whether storage charges apply after a specified period.

Keep meat under appropriate temperature control

Finished products must be stored and handled under appropriate food-safety conditions.

Customers collecting a substantial quantity of beef should arrive prepared to transport it safely.

A quarter or half beef is not a grocery bag.

Encourage customers to bring enough coolers, insulated containers or other appropriate transport capacity for the size of their order.

Help customers plan freezer space

Producers should prepare customers for the approximate size of their order before pickup. The final amount varies with carcass size and cutting instructions, so avoid presenting generic freezer-space estimates as guarantees.

Confirm the handoff

A simple pickup record can document that an order was collected and by whom. This can be especially useful when the producer, customer and processor are separate parties.

Provide safe-food guidance

Customers should refrigerate or freeze meat appropriately and follow safe thawing, handling and cooking practices after taking the product home.
